More than a recipe book, it stands as a celebration of a city, a people and their resilience. Fadi?Kattan is a Franco?Palestinian chef and hotelier born and raised in Bethlehem. He founded the restaurant Fawda in 2016 in his home city and later opened Akub in London in 2023. Having studied hotel management in Paris, he leverages his classical training and his deep connection to Palestine?s land and food heritage to explore and elevate Palestinian cuisine. His debut cookbook, Bethlehem: A Celebration of Palestinian Food, draws on family recipes, local markets, and the artisans and farmers of the West Bank to bring the flavours of his homeland to a global audience.
